The quintessential American apple salad – the WaIdorf Salad. The original recipe goes back to the Waldorf-Astoria Hotel in New York City, circa 1896, where it was made with celery, apples, walnuts, grapes, in a mayonnaise sauce. The ingredient list is the frequent refrain in the popular Fawlty Towers episode “Waldorf Salad”.
Our recipe makes some changes. I love how this recipe, with all its apples and extra stuff, still makes it a point to include 1/4 teaspoon of white pepper. Sometimes I will really unbend and use half a teaspoon. Try it. It’s very good!

Ingredients
- 3 medium apples, unpeeled, cored, chopped (Golden or Red Delicious, Cortland, Winesap, Empire)
- 3 stalks of celery, diced
- 1/2 cup chopped pecans
- 1/3 cup raisins
- 3/4 cup whipping cream
- 2 tablespoons lemon juice
- 1/4 teaspoon ground white pepper
Instructions
- Combine the apples, celery, pecans and raisins in a large bowl.
- Combine the whipping cream, lemon juice and white pepper and whip until mixture is thick and forms soft peaks.
- Stir cream mixture into apple mixture.
- Chill before serving.
- May be served on lettuce leaves, if desired.
