Waldorf Salad

3 medium apples, unpeeled, cored, chopped (Golden or Red Delicious, Cortland, Winesap, Empire)
3 stalks of celery, diced
1/2 cup chopped pecans
1/3 cup raisins
3/4 cup whipping cream
2 tablespoons lemon juice
1/4 teaspoon ground white pepper

Combine the apples, celery, pecans and raisins in a large bowl.

Combine the whipping cream, lemon juice and white pepper and whip until mixture is thick and forms soft peaks.

Stir cream mixture into apple mixture. Chill before serving. May be served on lettuce leaves, if desired. Makes about 6 servings.
