Caroline's Buttermilk Pie

This is a wonderful, old-fashioned pie. Don't be put off by the buttermilk; this is a sweet and flavorful dessert. You can use your favorite electric device to put this mixture together and, if you've got a good arm, you can even beat it by hand.
  • 3 eggs, well beaten
  • 1/2 cup (1 stick) butter, at room temperature
  • 1-1/2 cups sugar
  • 3 tablespoons all-purpose flour
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 unbaked 9-inch pie shells
  1. Preheat oven to 400°F.
  2. In a medium bowl, combine beaten eggs, butter, sugar and flour, and beat until smooth.
  3. Stir in buttermilk and vanilla. Pour into unbaked pie shell.
  4. Bake 10 minutes at 400°F. Reduce heat to 350°F and bake an additional 45 minutes, or until center is firm.

Prep time: 6 minutes; Cooking time: 45 minutes; Total time: 51 minutes
