Cool Tuna Macaroni Salad
This macaroni salad is a great cool supper for a warm summer evening.
Ingredients:
- 8 ounces elbow macaroni, cooked with 1/2 teaspoon salt, rinsed in cold water, and drained
- 1 large cucumber, peeled, seeded and thinly sliced
- 1 large or 2 medium ripe tomatoes, seeded and chopped
- 1/2 cup chopped green pepper
- 3 green onions (white part only), minced
- 2 7-ounce cans solid pack tuna, drained
- 1 hard cooked egg, chopped
(How to hard cook eggs)1 cup Miracle Whip®1/2 cup bottled Italian salad dressing (your choice)1 tablespoon Dijon mustard1/4 teaspoon ground black pepperPreparation:- Combine the macaroni, cucumber, tomatoes, green pepper, onion, tuna and chopped egg in a large bowl.
- Whisk together the Miracle Whip, Italian dressing, mustard and pepper to make a smooth dressing.
- Pour dressing over the vegetables, mix well, cover and chill.
- Give the salad a good stir before serving.
Note: This salad keeps well.
