Cool Tuna Macaroni Salad

This macaroni salad is a great cool supper for a warm summer evening.

  • 8 ounces elbow macaroni, cooked with 1/2 teaspoon salt, rinsed in cold water, and drained
  • 1 large cucumber, peeled, seeded and thinly sliced
  • 1 large or 2 medium ripe tomatoes, seeded and chopped
  • 1/2 cup chopped green pepper
  • 3 green onions (white part only), minced
  • 2 7-ounce cans solid pack tuna, drained
  • 1 hard cooked egg, chopped

  • 1 cup Miracle Whip®
  • 1/2 cup bottled Italian salad dressing (your choice)
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon ground black pepper
  1. Combine the macaroni, cucumber, tomatoes, green pepper, onion, tuna and chopped egg in a large bowl.
  2. Whisk together the Miracle Whip, Italian dressing, mustard and pepper to make a smooth dressing.
  3. Pour dressing over the vegetables, mix well, cover and chill.
  4. Give the salad a good stir before serving.

Note: This salad keeps well.
