Spicy Rice and Vegetables

Ingredients:
  • 1 cup mild chili peppers, diced
  • 1 cup green bell pepper, diced
  • 1 cup diced celery
  • 1 cup chopped onion
  • 4 tablespoons butter
  • 1 tablespoon honey
  • 1-1/2 cups brown rice
  • 3 cups water
  • 1 apple, chopped
  • 1/2 cup chopped toasted almonds
Preparation:
  1. Sauté the peppers, celery and onion in the butter over low heat.
  2. Add the rice and continue to saut&eactue; until onions are clear.
  3. Add water and honey, and bring to a boil.
  4. Turn heat to low, cover, and simmer for 45 minutes.
  5. During last 5 minutes of cooking, add apple and almonds.

Ready in: 4 Hrs
