Spicy Rice and Vegetables
Ingredients:
- 1 cup mild chili peppers, diced
- 1 cup green bell pepper, diced
- 1 cup diced celery
- 1 cup chopped onion
- 4 tablespoons butter
- 1 tablespoon honey
- 1-1/2 cups brown rice
- 3 cups water
- 1 apple, chopped
- 1/2 cup chopped toasted almonds
Preparation:
- Sauté the peppers, celery and onion in the butter over low heat.
- Add the rice and continue to saut&eactue; until onions are clear.
- Add water and honey, and bring to a boil.
- Turn heat to low, cover, and simmer for 45 minutes.
- During last 5 minutes of cooking, add apple and almonds.
