Pineapple Filling

This filling turns an ordinary white or yellow cake into something very special.

  • 1/2 cup sugar
  • 1/4 cup sifted, all-purpose flour
  • 1/3 cup pineapple juice
  • 1 egg yolk, slightly beaten
  • 1 tablespoon fresh lemon juice
  • 1/2 cup drained, canned crushed pineapple
  1. Combine the sugar, flour, pineapple juice and egg yolk in a saucepan. Cook over low heat until thickened, stirring frequently. Remove from heat.
  2. Stir in the lemon juice and crushed pineapple. Allow to cool before filling cake.
  3. Makes enough to fill a 3-layer cake.
