Peanut Butter Fudge

  • 1 cup sugar
  • 1 cup brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 cup miniature marshmallows
  • 1/2 cup peanut butter
  • 1 teaspoon vanilla extract
  1. Combine sugars, salt and milk in a heavy saucepan. Cook over medium heat to soft ball stage (236°F on candy thermometer). Remove from heat and add the marshmallows, peanut butter and vanilla.
  2. Beat by hand or with an electric mixer until thick, creamy and mixture loses its gloss. Spread in a buttered 8-inch square dish, and cut into squares.
  3. Makes 7 to 8 servings.
