Peanut Butter Fudge
Ingredients:
- 1 cup sugar
- 1 cup brown sugar, packed
- 1/4 teaspoon salt
- 1/2 cup milk
- 1 cup miniature marshmallows
- 1/2 cup peanut butter
- 1 teaspoon vanilla extract
Preparation:
- Combine sugars, salt and milk in a heavy saucepan. Cook over medium heat to soft ball stage (236°F on candy thermometer). Remove from heat and add the marshmallows, peanut butter and vanilla.
- Beat by hand or with an electric mixer until thick, creamy and mixture loses its gloss. Spread in a buttered 8-inch square dish, and cut into squares.
- Makes 7 to 8 servings.
