Oven-Barbecued Pork Roast

Ingredients:
  • 4- to 5-pound pork loin roast
  • 1-1/2 cups water
  • 1 cup apple cider vinegar
  • 1/2 cup catsup
  • 1/2 cup Worcestershire sauce
  • 1 medium onion, chopped
  • 3 tablespoons dry mustard
  • 3 tablespoons brown sugar
  • 1-1/2 teaspoons salt
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon black pepper
Preparation:
  1. Preheat oven to 325°F.
  2. Place roast, fat side up, in a 9x13-inch baking dish or pan. Insert meat thermometer into thickest part of roast, being careful not to touch any bone.
  3. Combine remaining ingredients, mixing well, and pour over roast. Bake, uncovered, for 2-1/2 to 3 hours or until thermometer registers 170°F, basting roast frequently.
  4. Remove from oven, and let roast stand for 15 minutes. Serve with sauce remaining in pan.
  5. Makes 7 to 8 servings.
