Oven-Barbecued Pork Roast
Ingredients:
- 4- to 5-pound pork loin roast
- 1-1/2 cups water
- 1 cup apple cider vinegar
- 1/2 cup catsup
- 1/2 cup Worcestershire sauce
- 1 medium onion, chopped
- 3 tablespoons dry mustard
- 3 tablespoons brown sugar
- 1-1/2 teaspoons salt
- 1/4 teaspoon crushed red pepper
- 1/4 teaspoon black pepper
Preparation:
- Preheat oven to 325°F.
- Place roast, fat side up, in a 9x13-inch baking dish or pan. Insert meat thermometer into thickest part of roast, being careful not to touch any bone.
- Combine remaining ingredients, mixing well, and pour over roast. Bake, uncovered, for 2-1/2 to 3 hours or until thermometer registers 170°F, basting roast frequently.
- Remove from oven, and let roast stand for 15 minutes. Serve with sauce remaining in pan.
- Makes 7 to 8 servings.
