Mushroom Swiss Burgers

Ingredients:
  • 2 4-ounce cans mushroom stems and pieces, drained and chopped
  • 1/4 cup chopped green onions
  • 1 tablespoon chopped parsley
  • 2 tablespoons butter


  • 1-1/2 pounds lean ground beef
  • 1/4 cup dry bread crumbs
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1 teaspoon lemon pepper
  • 3 tablespoons grated Parmesan cheese


  • 6 slices Swiss cheese
Preparation:
  1. Sauté the mushrooms, onions and parsley in the butter over medium-low heat until onions are softened. Remove from heat and keep warm. (Or make in advance and reheat after grilling burgers.)
  2. Combine the ground beef, bread crumbs, water, salt, lemon pepper and Parmesan cheese, mixing well. Shape mixture into 6 patties about 4 inches in diameter.
  3. Grill patties about 4 inches from coals or heating element, turning once, 5 to 7 minutes on each side for medium, topping each patty with a slice of Swiss cheese during last minute of grilling.
  4. Spread a heaping tablespoon of the mushroom mixture on each patty. Serve on grilled hamburger buns.
