This spice cake recipe is quite easy to make, both the 2-layer cake or the sheet cake version. It’s made with buttermilk and just one egg. To make this recipe I used Cindy’s Good Old Vanilla Cream Cheese Frosting.
Bake this cake and the spice-filled scent will permeate your house. Family members will wander in, curious as to what’s cooking. It’s Spice Cake! They’ll stick around to see if it’s as good as it smells. (It is.)

Ingredients
- 3/4 cup butter or shortening
- 1 cup brown sugar
- 1 egg
- 1/2 cup raisins, regular or golden
- 1/4 teaspoon salt
- 1/4 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- 1/4 teaspoon allspice
- 1/4 teaspoon cinnamon
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- 2 teaspoons baking powder
Instructions
- Cream together the butter, brown sugar and egg until light and fluffy. Stir in the raisins, salt and spices. Mix well. Add half the flour. Blend in the baking soda and milk. Stir in the remaining flour and baking powder.
- For layer cake: Pour batter into two greased and floured 8-inch cake pans. Bake in 375°F preheated oven for 25 to 30 minutes or until top springs back when touched, or test with cake tester. Allow to cool for 10 minutes, then invert onto wire racks to finish cooling before frosting.
- For Sheath Cake: Pour into greased and floured 9×13-inch pan. Bake in 350°F preheated oven for 40 to 45 minutes or until top springs back when touched, or test with cake tester. Allow to cool, then frost in pan.
Notes
Optional: Adding some chopped, toasted pecans on the cake. Lightly toasting the pecans will make a big flavor difference. To toast whole pecans, spread them out on a baking sheet and toast at 350°F for 4 or 5 minutes, or until you begin to smell them. Pecan pieces or chopped pecans will take less time to toast.
