Green Rice

This rice is a delicious and surprisingly attractive side dish.

  • 2 cups uncooked white rice
  • 2/3 cup finely chopped green pepper
  • 3/4 cup finely chopped green onion (white and green parts)
  • 1/2 cup chopped parsley
  • 1/4 cup olive oil
  • 1-1/2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper
  • 4 cups beef broth
  1. Preheat oven to 350°F degrees. Butter a 2-quart casserole or 9x13-inch dish.
  2. Combine all ingredients in baking dish. Cover (with lid or aluminum foil) and bake for 45 minutes, or until rice is tender and all liquid is absorbed. Before serving, toss lightly.
  3. Makes 7 to 8 servings.
