Caroline's Buttermilk Pie
This is a wonderful, old-fashioned pie. Don't be put off by the buttermilk; this is
a sweet and flavorful dessert. No need for an electric mixer here. You can easily beat this to satisfaction by hand in a good mixing bowl.
Ingredients:
- 3 eggs, well beaten
- 1/2 cup (1 stick) butter, melted and cooled
- 1-1/2 cups sugar
- 3 tablespoons all-purpose flour
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 unbaked 9-inch pie shells
Preparation:
- Preheat oven to 400°F.
- In a medium bowl, combine beaten eggs, melted butter, sugar and flour, and beat until smooth.
- Stir in buttermilk and vanilla. Pour into unbaked pie shell.
- Bake 10 minutes at 400°F. Reduce heat to 350°F and bake an additional 40 to 45 minutes, or until center is firm. Keep an eye on it to make sure it doesn't over-brown.
