Black Forest Oatmeal Cookies
Ingredients:
- 1 cup shortening
- 1 cup firmly packed brown sugar
- 3/4 cup white sugar
- 2 eggs
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1-2/3 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2-1/2 cups uncooked oatmeal (not instant)
- 1-1/2 cups chopped red candied cherries
- 1-1/4 cups white chocolate chips
- 1 cup semi-sweet chocolate chips
- 3/4 cup chopped pecans
Preparation:
- Preheat oven to 375°F.
- Combine the flour, baking powder, baking powder and salt in a medium bowl. Set aside.
- In a large bowl of an electric mixer, beat the shortening, brown sugar, white sugar, eggs, milk and vanilla until creamy.
- Reduce mixer speed to low and gradually add the flour mixture until well blended. Stir in oats, mix well, and stir in remaining ingredients.
- Drop by tablespoonfuls onto ungreased cookie sheet. Bake at 375°F for 10 to 13 minutes or until light golden. Cool 10 minutes before removing to racks.
- Makes about 6 dozen cookies.
