- 3 to 4 pound chuck roast, 2-1/2 to 3 inches thick
- 3 cloves garlic, minced, crushed or put through a press
- 1/4 cup red wine vinegar
- 1/4 cup olive oil

- 1 teaspoon dry mustard
- freshly ground black pepper (several healthy grinds)
- 2 tablespoons tomato catsup
Preparation:
- Preheat oven to 450°F.
- Combine ketchup, worcestershire sauce, chili powder, salt, tabasco sauce and water in a saucepan. Bring sauce to a boil, then remove from heat.
- Place ribs in a shallow roasting pan, meaty side up. Cover with slices of onion and lemon. Roast in hot oven for 30 minutes.
- Lower oven temperature to 350°F. Pour sauce over ribs, and continue baking, basting frequently with pan juices, 20 to 30 minutes.
