Prickly Pear Margarita (Starlight Theatre)
Texas Monthly magazine published the batched-version of the prickly pear margarita served at the super cool Starlight Theater Restaurant & Saloon in Terlingua as Starlight Theater's Prickly Pear’ita. We adapted it for one. Look for prickly pear syrup or nectar that has real sugar. Avoid the cheap stuff with corn syrup.
Ingredients:
- 2 ounces tequila
- 1 ounce prickly pear syrup
- 1 ounce fresh squeezed lime juice
- ½ ounce simple syrup
- salt (optional)Preparation:
- Mix together the tequila, prickly pear syrup, simple syrup and lime juice in a cocktail shaker.
- Shake vigorously and strain into a collins glass filled with ice cubes.
- Some folks rub the rim of each glass with a cut lime wedge and dip the rim into salt to coat it thoroughly.
- Makes 1 delicious margarita.
NOTE: I like this recipe over other prickly pear margarita recipes because it does not include the traditional orange liqueur. Savor the flavor of cactus!
