Cheddar Cheese Soup

Want a simple yet delicious supper? Grab a crusty loaf of bread at the deli and whip up a green salad. This soup will make it all memorable.
  • 1/4 cup butter (1/2 stick)
  • 1/4 cup plus 2 tablespoons all-purpose flour
  • 2-2/3 cups chicken broth
  • 2 cups milk
  • 1/4 teaspoon white pepper
  • 2 tablespoons chopped pimiento
  • 1/4 cup plus 2 tablespoons dry white wine
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon Tabasco sauce
  • 2 cups shredded sharp Cheddar cheese
Using a heavy saucepan, melt the butter over medium-low heat. Add the flour and stir until smooth. Keep stirring for one minute. Gradually add the broth and milk, and cook over medium heat, stirring constantly, until thickened and bubbly. Stir in the pepper, pimiento, wine, Worcestershire sauce and Tabasco sauce. Heat just to boiling, stirring frequently.

Remove from heat, add the cheese, and stir until melted. Serve immediately.
Makes 5 cups.
