Browned Onion Gravy

  • 1 tablespoon safflower or olive oil
  • 1 large onion, halved and sliced
  • 1-1/2 cups water
  • 2 teaspoons vegetable seasoning (like Spike)
  • 1/4 teaspoon dried tarragon
  • 1/8 teaspoon sage
  • 1/4 teaspoon chervil
  • dash of nutmeg
Heat oil in a large skillet. Add onion slices and sauté over medium heat until onion wilts and begins to brown. Add water, vegetable seasoning, tarragon, sage, chervil and nutmeg. Bring to a boil and lower to medium-low heat. Cook until gravy is reduced to about 3/4 cup.

Note: This tasty gravy is great with Creamy Mashed Potatoes.
