Black Forest Oatmeal Cookies

  • 1 cup shortening
  • 1 cup firmly packed brown sugar
  • 3/4 cup white sugar
  • 2 eggs
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1-2/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2-1/2 cups uncooked oatmeal (not instant)
  • 1-1/2 cups chopped red candied cherries
  • 1-1/4 cups white chocolate chips
  • 1 cup semi-sweet chocolate chips
  • 3/4 cup chopped pecans
Preheat oven to 375°F.

Combine the flour, baking powder, baking powder and salt in a medium bowl. Set aside.

In a large bowl of an electric mixer, beat the shortening, brown sugar, white sugar, eggs, milk and vanilla until creamy.

Reduce mixer speed to low and gradually add the flour mixture until well blended. Stir in oats, mix well, and stir in remaining ingredients.

Drop by tablespoonfuls onto ungreased cookie sheet. Bake at 375°F for 10 to 13 minutes or until light golden. Cool 10 minutes before removing to racks.
Makes about 6 dozen cookies.
