Apple Pecan Cheese Pie
- 4 eggs
- 2 cups creamed cottage cheese (see Note)
- 2 teaspoons vanilla
- 1/3 cup pure maple syrup
- 1/4 cup all-purpose flour
- 2 tablespoons grated orange peel
- 1/4 teaspoon nutmeg
- 2 cups chopped green apples
- 1 cup pecans, chopped
- 1 unbaked pie shell
Preheat oven to 325°F.
Beat together eggs and cottage cheese. Add vanilla, syrup, flour, orange
peel and nutmeg. Blend thoroughly. Stir in apples and pecans.
Pour filling into 9-inch unbaked pie shell. Bake at 325°F for 1
hour. Top of pie will be evenly dark brown when done.
Note: If you are unable to find creamed cottage cheese at your supermarket, put
ordinary cottage cheese (large or small curd) in your blender and pulse until mixture is
smooth. Measure 2 cups of the mixture for this recipe.
