Grandma's Pineapple Filling

This filling turns an ordinary white or yellow cake into something very special.
  • 1/2 cup sugar
  • 1/4 cup sifted, all-purpose flour
  • 1/3 cup pineapple juice
  • 1 egg yolk, slightly beaten
  • 1 tablespoon fresh lemon juice
  • 1/2 cup drained, canned crushed pineapple
Combine the sugar, flour, pineapple juice and egg yolk in a saucepan. Cook over low heat until thickened, stirring frequently. Remove from heat.

Stir in the lemon juice and crushed pineapple. Allow to cool before filling cake. Makes enough to fill a 3-layer cake.
