Taste of Texas: Tito's Handmade Vodka
by Randy Lankford
The story of Tito's Handmade Vodka, Texas' only legally distilled spirit, is both inspirational and terrifying. And for pretty much the same reasons.
It's inspirational from the perseverance-pays-off perspective, and terrifying from the $80,000 in debt with two mortgages and 12 maxed out credit cards point of view.

Autumn Apples Aplenty
by Eleanor Bradshaw
Whether or not September brings a nip in the air to your part of the country, this month
calls to mind images of apple trees heavy with fruit, apples on the teacher's desk, and apples -- lots of apples -- for making wonderful dishes.
As long as you're frying catfish, fry up some Hush Puppies,
too.
- 6 catfish fillets (good size)
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- few drops of Tabasco or your favorite hot sauce (optional)
- 1 cup all-purpose flour
- 1 cup cornmeal
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 cup bacon drippings or canola oil (or 2 tablespoons of each)
Sprinkle fillets on both sides with the pepper, 1/2 teaspoon of the salt
and desired amount of hot sauce (Don't go overboard here; catfish has a delicate flavor, and
the idea is just to suggest some spice -- not overpower).
Allow fillets to set at room temperature for 10 or 15 minutes. Combine the flour, cornmeal,
baking powder and remaining salt, mixing well. Dredge fillets in the flour/cornmeal mixture,
and allow them to set for about 5 minutes. Fry fillets in hot oil for 8 to 10 minutes,
turning once, until golden brown on both sides. Serve at once.
One cup each of self-rising flour and self-rising cornmeal can be
used in this recipe, if you have them in your pantry. If you do, omit the baking powder
and salt in the flour/cornmeal mixture.
You can find this and over 500 more recipes in
Grandma's Cookbook.

Congratulations winners!
We are frequently asked if we award T-Shirts to non-US residents, and the answer is Yes.
We have had quite a few Canadian winners, and have also sent T-Shirts to winners in England,
Australia, Ireland, Switzerland and Germany.
The Rules
Since we began our T-Shirt giveaway seven years ago, our contest
rules remained unchanged. Readers have been able to enter as many times as
they like, and their entries were retained in our database. As you can
imagine, our contest database has become very large (which is good), BUT much
of it consists of old email addresses that are no longer valid. Therefore, we
are making the following change in our contest rules:
Readers can still enter as often as they like; however, each contest entry
will expire three months following the date it was entered and will disappear
from the database. This will greatly reduce the number of "names in the hat"
and improve the odds of winning. We think this change will result in an even
better contest.
We are frequently asked how one goes about entering the T-shirt contest.
