Many of you emailed to express concern because you had not received your February newsletter. That was no accident. We had been operating with essentially the same email server since we started the newsletter in 1998, and it was time for a major upgrade. We are pleased to announce that we now have a new, state-of-the-art email server but, unfortunately, the installation stood in the way of a February newsletter.

Nobody gets so old that the idea of cake and ice cream doesn't conjure up the delight we felt as children at a birthday party.     Classic Recipe:
    Chiles Rellenos Pie

    This is a wonderful brunch or supper dish.

    • 14 ounces canned green chiles (2 7-ounce cans)
    • 1 pound Monterrey Jack cheese, sliced
    • 1 pound Cheddar cheese, sliced
    • 4 tablespoons whole wheat flour
    • 1 cup evaporated milk
    • 1 cup sour cream
    • 4 large eggs
    • 1 cup cooked chicken or turkey, diced
    • 2 cups chunky salsa (your choice)
    Preheat oven to 350°F. Cut chiles open and line a 9x13-inch baking dish with them. Layer both cheeses evenly over chiles. Add any remaining chiles over the cheese layer.

    Mix the flour with a small amount of the milk; using a wire whisk, make a smooth paste. Mix in the remaining milk and sour cream. Beat in the eggs, one at a time, and add the diced meat.

    Pour mixture over chiles and cheese. Bake for 30 minutes at 350°F. Pour salsa over top and bake an additional 15 minutes. Makes 8 to 10 servings.

    The Rules
    Since we began our T-Shirt giveaway five years ago, our contest rules remained unchanged. Readers have been able to enter as many times as they like, and their entries were retained in our database. As you can imagine, our contest database has become very large (which is good), BUT much of it consists of old email addresses that are no longer valid. Therefore, we are making the following change in our contest rules:

    Readers can still enter as often as they like; however, each contest entry will expire three months following the date it was entered and will disappear from the database. This will greatly reduce the number of "names in the hat" and improve the odds of winning. We think this change will result in an even better contest. We are frequently asked how one goes about entering the T-shirt contest. Sign up here.
