Perfect Iced Tea

What could possibly be wrong with the beautiful glass of iced tea pictured here? You'll find out
when you read Patricia Mitchell's step-by-step instructions for making perfect
iced tea. June is National Iced Tea month, making this article's lesson even more vital to our
society's social fabric.
Cool and delicious, this pie is perfect for topping off a Tex-Mex or
barbecue dinner.
- 8 ounces cream cheese, softened
- 1/2 cup sugar
- 1 14-ounce can sweetened condensed milk
- 1 6-ounce can frozen lemonade concentrate, completely thawed
- 8-ounce container whipped topping, thawed, divided
- yellow food coloring (optional)
- 1 prepared 9-inch pastry shell
Beat the softened cream cheese with an electric
mixer, letting the mixer run for 3 or 4 minutes on high speed. It should
be fluffy. Lower mixer speed to medium and gradually add the sweetened
condensed milk, lemonade concentrate and food coloring (see Note, below).
Remove the bowl from the mixer, and gently fold in half of the whipped
topping. Reserve remaining half for garnish.
Pour filling into a prepared pie shell, and chill for several hours until set. Serve pie
with a dollop of whipped topping.
You only need 2 or 3 drops of food coloring, if you choose
to use it. The result should be pale yellow -- not traffic light yellow. The choice of pie shell
is up to you. Click on the

The Rules
Since we began our T-Shirt giveaway five years ago, our contest
rules remained unchanged. Readers have been able to enter as many times as
they like, and their entries were retained in our database. As you can
imagine, our contest database has become very large (which is good), BUT much
of it consists of old email addresses that are no longer valid. Therefore, we
are making the following change in our contest rules:
Readers can still enter as often as they like; however, each contest entry
will expire three months following the date it was entered and will disappear
from the database. This will greatly reduce the number of "names in the hat"
and improve the odds of winning. We think this change will result in an even
better contest.
