It's not even summer yet, but it's plenty hot in Texas. It's appropriate, then, that June is National Iced Tea Month, so we are running our classic article, Perfect Iced Tea.

Also in the interest of keeping it cool, this month's newsletter features Patricia Mitchell's article, How to Use an Old-Fashioned Ice Cream Freezer. We work every Summer to make Texas Cooking the best stop on the Internet for homemade ice cream recipes.

At the beginning of Summer, berries of all kinds come into season. Blackberries and strawberries are one of Texas' biggest crops. We are always amazed at the number of people visiting us looking for ways to use their fresh strawberries. Read Sidney Carlisle's Summer Berries, and learn how to make the most of this season's abundant berry crop. In response to many reader requests, John Raven, Ph.B., holds forth on some of finer points of Dutch oven cookery in Dutch Oven Cooking: Cast Your Irons in the Fire.

Add to the above our new recipe for an old-fashioned favorite, Lemon Ice Box Pie, and you will agree that we have a full edition. So let's get going.

    by Patricia Mitchell
Maybe you inherited an old-fashioned, hand-cranked (or electric) ice cream freezer. Or perhaps you retrieved your own down from the rafters and dusted the cobwebs off it. In any case, you don't have any instructions, and can't really remember the process.

  • Summer Berries
    by Sidney Carlisle
A basket of freshly-picked berries possess a special aura, whether they are black, blue or red. Sidney Carlisle explains the lovely surprises berries bring after gathering them at a farmer's market, or even from grocery stores. Her recipies for fresh blueberry syrup, blackberry cobbler or strawberry shortcake sauce will give your summer cooking pizazz.
    Dutch Ovens
  • Dutch Oven Cooking: Cast Your Irons in the Fire
    by John Raven
Dutch oven cookery has gained a real following as outdoor cooking grows in popularity. It's an ancient method of cooking. When man learned to cast bronze and iron, first he made bells. From the bells, it was a short step to cannons, and then on to all the other things that are made of cast iron.

New Recipe: Lemon Ice Box Pie

Cool and delicious, this pie is perfect for topping off a Tex-Mex or barbecue dinner.

    • 8 ounces cream cheese, softened
    • 1/2 cup sugar
    • 1 14-ounce can sweetened condensed milk
    • 1 6-ounce can frozen lemonade concentrate, completely thawed
    • 8-ounce container whipped topping, thawed, divided
    • yellow food coloring (optional)
    • 1 prepared 9-inch pastry shell
Beat the softened cream cheese with an electric mixer, letting the mixer run for 3 or 4 minutes on high speed. It should be fluffy. Lower mixer speed to medium and gradually add the sweetened condensed milk, lemonade concentrate and food coloring (see Note, below).

Remove the bowl from the mixer, and gently fold in half of the whipped topping. Reserve remaining half for garnish.

Pour filling into a prepared pie shell, and chill for several hours until set. Serve pie with a dollop of whipped topping.

You only need 2 or 3 drops of food coloring, if you choose to use it. The result should be pale yellow -- not traffic light yellow. The choice of pie shell is up to you. Click on the recipe link to see all available pie shells.

You can find this and over 400 more recipes in Grandma's Cookbook.

Congratulations winners! We are frequently asked if we award T-Shirts to non-US residents, and the answer is Yes. We have had quite a few Canadian winners, and have also sent T-Shirts to winners in England, Australia, Ireland, Switzerland and Germany.

    The Rules
Since we began our T-Shirt giveaway five years ago, our contest rules remained unchanged. Readers have been able to enter as many times as they like, and their entries were retained in our database. As you can imagine, our contest database has become very large (which is good), BUT much of it consists of old email addresses that are no longer valid. Therefore, we are making the following change in our contest rules:

Readers can still enter as often as they like; however, each contest entry will expire three months following the date it was entered and will disappear from the database. This will greatly reduce the number of "names in the hat" and improve the odds of winning. We think this change will result in an even better contest. We are frequently asked how one goes about entering the T-shirt contest. Sign up here.
