Most of us think of Memorial Day weekend as the first official weekend of summer. Perhaps it's because school usually ended just before the holiday, and we were suddenly free of the responsibility and drudgery of the school day.

Every year for the past twenty-seven years around Valentine's Day there has been an interesting gathering of folks at Luckenbach, Texas, to celebrate The Hug-In. The Hug-In started with about three dozen chili cooks who were getting together to plan the coming year's chili-cooking schedule. Other than the usual visiting, picking, grinning and hugging, there is always a Feed-In -- a big pot luck meal for the assembled.

Recipe: Grilled Pork Tenderloin Southwest

  • 4 pork tenderloins, about 1 pound each
  • 2 teaspoons chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • ¼ cup dried, crushed chiles (New Mexico, ancho, cascabel, chipotle, serrano, in order of mildest to hottest)
  • 4 cloves garlic, minced
  • ½ cup fresh lime juice (about 3 large limes)
  • ½ cup olive oil

Mix all marinade ingredients and marinate tenderloins in a glass or plastic container for several hours or overnight.

Before grilling, remove the tenderloins from the refrigerator and let them come to room temperature.

Preheat your grill. Remove the tenderloins from the marinade, and discard the marinade. Grill over high heat for 10 minutes, turning frequently, to sear. Then, move the tenderloins to a cooler part of your grill or, if you are using a gas grill, reduce the heat, and cook for approximately 15 minutes longer, turning frequently, or until an instant-read meat thermometer registers 160F degrees. Remove from heat, cover, and allow to rest for 10 minutes. Slice on the diagonal and serve with sliced avocados, onions and tomatoes. Serves eight.

Since we began our T-Shirt giveaway five years ago, our contest rules remained unchanged. Readers have been able to enter as many times as they like, and their entries were retained in our database. As you can imagine, our contest database has become very large (which is good), BUT much of it consists of old email addresses that are no longer valid. Therefore, we are making the following change in our contest rules:

Readers can still enter as often as they like; however, each contest entry will expire three months following the date it was entered and will disappear from the database. This will greatly reduce the number of "names in the hat" and improve the odds of winning. We think this change will result in an even better contest.
