It's mighty hot in Texas and just about everywhere. So before we go any further, you need to know that relief is at hand. The Beverages section of Grandma's Cookbook contains a number of incredibly refreshing drinks like Mexican Tropical Tea and Peach Iced Tea, to name just a few, that will help you deal with the heat. Now that we've taken care of the First Aid, let's get on with the July newsletter.

John Raven's Hot Dachshund: Sausage in a Roll pays tribute to that All-American classic, the hot dog. And Randy Lankford continues his double series of articles on Texas dining and wineries in the Lone Star State. This month he turned his sights toward Becker Vineyards, a little Hill Country winery with some very big wines, and one of San Antonio's finest restaurants, Bohanan's Prime Steaks & Seafood. Patricia Mitchell reviews a new, important book on the barbecue scene, Peace, Love, and Barbecue, and finds it impressive from beginning to end. The review tells it all and includes a fantastic brisket recipe not to be missed by anyone who loves barbecue.

This month's classic article, Homemade Ice Cream from the New Countertop Freezers, provides further relief from the heat, as well as delight to the palate, while our brand new recipe, Grilled Chicken Kabobs, is sure to please.

    Ice Cream Homemade Ice Cream from the New Countertop Freezers

Recipe: Grilled Chicken Kabobs
Wonderful smoky tropical taste.
  • 1/2 cup Coco Lopez Cream of Coconut
  • 1/2 cup fresh lemon juice
  • 2 tablespoons chicken broth
  • 1 teaspoon marjoram leaves
  • 1 large clove garlic, minced or put through garlic press
  • 1/2 teaspoon crushed red pepper flakes
  • 1-1/2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 red bell pepper, cut in bite-sized pieces
  • 1 green bell pepper, cut in bite-sized pieces
  • 14-ounce can pineapple chunks, drained, or 2 cups fresh pineapple chunks
In a small bowl, combine the cream of coconut, lemon juice, chicken broth, marjoram, garlic and crushed red pepper. Put the chicken, pepper pieces and drained pineapple in a plastic zip bag or shallow dish. Pour marinade over chicken and peppers and refrigerate for 2 to 4 hours, turning occasionally.

Preheat the grill. Remove the chicken, peppers and pineapple, reserving the marinade. Arrange chicken, peppers and pineapple on four skewers.

Bring the reserved marinade to a boil, and boil gently for 2 minutes.

Brush the grill with a little oil to prevent sticking. Brush kabobs with marinade, and grill over indirect heat with grill cover closed for 10 minutes. Turn kabobs, brushing with marinade. Check for doneness, and grill until chicken is done.

Therefore, we are making the following change in our contest rules:

Readers can still enter as often as they like; however, each contest entry will expire three months following the date it was entered and will disappear from the database. This will greatly reduce the number of "names in the hat" and improve the odds of winning. We think this change will result in an even better contest.
