An interesting tidbit (no pun intended), Pineapple Upside Down Cake Day is Tuesday, April 20th, never a better time to
reflect upon one of our favorite desserts. Although the baking style goes back centuries, the popular
American-style cake appeared after Jim Dole invented the canned pineapple process in 1903. In the
1920's the Hawaiian Pineapple Company (now Dole Pineapple) received thousands of recipes for the
cake in a cooking contest. Subsequent recipe contests have made it even more popular and,
judging by the number of hits the recipe page receives, its popularity continues to this day.
New Recipe:
Tequila Chicken
You'll love this this wonderful marinated chicken dish whether you bake it in
your oven or grill it on the patio.
- 1/4 cup tequila
- 2 tablespoons fresh lime juice
- 1 teaspoon lime zest
- 1 tablespoon honey
- 1 small clove garlic, minced or put through garlic press
- 1 tablespoon minced fresh cilantro
- 1 tablespoon olive or canola oil
- 1 small jalapeño, stemmed, seeded and minced
- 1/2 teaspoon salt
- 4 boneless, skinless chicken breast halves
Mix all ingredients and place in a glass dish or 1-gallon freezer bag. Add
chicken breasts, and marinate overnight or at least 8 hours.
When you're ready to cook the chicken, drain it and pour the marinade
in a small saucepan. Over medium heat, bring the marinade to a boil and boil gently
for at least 4 minutes. Reduce heat and simmer until chicken is done.
To grill the chicken, cook it, uncovered, over medium-hot coals, basting it
with some of the marinade, until it is cooked through.
To bake the chicken, place the breasts in a small Pyrex dish, cover tightly
with aluminum foil, and bake in a 450°F preheated oven for 16 to 18 minutes,
until cooked through. Uncover the chicken for the last 3 minutes of
baking time.
Do not serve immediately, but cover with aluminum foil and let breasts rest
for 5 to 10 minutes. Serve whole or sliced, topped with the cooked marinade. Makes
4 servings.

The Rules
Since we began our T-Shirt giveaway five years ago, our contest
rules remained unchanged. Readers have been able to enter as many times as
they like, and their entries were retained in our database. As you can
imagine, our contest database has become very large (which is good), BUT much
of it consists of old email addresses that are no longer valid. Therefore, we
are making the following change in our contest rules:
Readers can still enter as often as they like; however, each contest entry
will expire three months following the date it was entered and will disappear
from the database. This will greatly reduce the number of "names in the hat"
and improve the odds of winning. We think this change will result in an even
better contest.
We are frequently asked how one goes about entering the T-shirt contest.
