Texas Peaches and Peach Recipes
Peaches are in season! Unfortunately because of the hard freeze in the
Texas Hill Country on Sunday March 30, 2003 - the unique Fredericksburg-Stonewall peaches are in short
supply. But don't let that stop you from finding other examples of the fine, ripe fruit for your
Summertime cooking.
In Texas, cling peaches, meaning peaches whose flesh clings to the pit, generally ripen in
May. Semi-freestones, not quite as clingy, ripen in June. Freestones, whose
flesh readily seperates from the pit, generally ripens in June and July.
Use peaches to make our famous peach cobbler, or one of our special pies.
